A chronograph, I guess. Maybe a moonphase (no matter if paired with a pointer date or a triple calendar). Although still, that's assuming I wouldn't spend that on some 1940s-1950s time-only, no-date watches.

Probably a vintage Omega Pie Pan, Baume and Mercier 1000m Capeland, Bulgari 2000m Diagono diver,
Vintage Grand Seiko High Beat, Citizen Campanola Cosmosign, Vintage Rolex Date Just . I'm sure there's more and I'm also sure these can be had for less then $3k?

$3K would buy 2 Pie Pans, they go for circa $1500 (1960s ones in steel- gold-cap for slightly less).
